⠀ Thoughts: So when you smell this, it smells like it came right out of the smoker. So being someone who isn’t a fan of smokey flavors, I was nervous. However, when I tasted this I was pleasantly surprised. The pineapple is the very first thing you taste and it lingers for a bit. Then you get the heat of the habaneros. The very last thing you get is the smokiness and it’s brief because the heat comes in waves. So he’s smoked the garlic cloves in this rather than the peppers. Maybe this is why I like it? Definitely don’t like the smell of it but it doesn’t taste as it smells. So smoked garlic cloves aren’t the only unique ingredient. He’s used slightly elevated versions of basic ingredients. He’s made simple taste complex. Shallots were a nice touch. They’re the best onion, in my opinion. Also, I love love love that he’s used rice vinegar, instead of the traditional vinegar. White vinegar can be a bit harsh sometimes. The habaneros have a bit of heat to them too. Made my lips tingle a little. So not too smokey, sweet, spicy, simple but complex! Bauce Sauce continues to impress me! If you haven’t gotten yourself a combo pack, do yourself a favor and get it ASAP!
